Sausage Couscous with Maple Syrup


Ingredients
  • 4 European sausages of  your choice
  • 30 ml (2 tablespoons) olive oil
  • 2 garlic cloves, finely chopped
  • 1 onion, chopped
  • 375 ml (1 ½ cups) celery, finely chopped
  • 375 ml (1 ½ cups) carrots, diced
  • 375 ml (1 ½ cups) green or red pepper
  • 375 ml (1 ½ cups) blanched broccoli
  • Salt and freshly ground pepper to taste
  • 30 ml (2 tablespoons) maple syrup
  • 310 ml ( 1 1/4 cups) chicken stock
  • 310 ml ( 1 1/4 cups) medium grain couscous
  • 30 ml (2 tablespoons) fresh oregano, chopped or 10 ml (2 teaspoons) dry oregano
  • 60 ml (1/4 cup) maple syrup
  • 60 ml (1/4 cup) orange juice
  • 30 ml (2 tablespoons) Dijon mustard

Method
  1. Boil the sausages in a saucepan for about 10 minutes;
  2. Meanwhile, heat 15 ml (1 tablespoon) of oil in a skillet over medium-high heat and brown the vegetables for about 3 to 4 minutes and season to taste;
  3. Add 30 ml (2 tablespoons) of maple syrup and the stock then bring to a boil;
  4. Remove from heat. Add the couscous, mix and sprinkle with oregano;
  5. Cover and let sit for 5 minutes or all liquid is absorbed;
  6. Drain the sausages and cut in half lengthways;
  7. Heat the rest of the oil in pan and brown the sausages over medium-high heat;
  8. Mix 60 ml (1/4 cup) of maple syrup with Dijon mustard and orange juice and pour over the sausages. Cook for 2 to 3 minutes to caramelize;
  9. Serve immediately on top of couscous.
