SMOKESTACK À L’ÉRABLE

Ingredients
Scotch foam (makes 2 servings):
  • Scotch foam (makes 2 servings):
  • A few drops single malt scotch
  • 15 ml (1 tablespoon) maple syrup
  • 1 egg white 
Smokestack:
  • 45 ml (1 1/2 oz.) reposado tequila
  • 30 ml (2 tablespoons) maple syrup
  • 20 ml (4 teaspoons) freshly squeezed lime juice
  • 30 ml (2 tablespoons) apple butter
  • A few ice cubes
  • 1 red apple slice for garnish

Method
Scotch foam:
  1. In a bowl, beat together all the ingredients with a hand mixer
  2. until you get a light, airy foam.
Smokestack:
  1. Add first 5 ingredients to a shaker and shake well. 
  2. Strain into a whisky glass filled with ice. 
  3. Top with a "cloud" of scotch foam and garnish with an apple slice.
