Maple Roasted Vegetables

Ingredients
  • 1 L (4 cups) chopped vegetables
  • 60 ml (1/4 cup) maple sugar
  • 30 ml (2 tbsp.) chopped fresh rosemary
  • 60 ml (1/4 cup) olive oil
  • salt and pepper

Method
  1. Preheat oven to 200ºC (400ºF).
  2. In a large bowl, combine 1 L (4 cups) chopped vegetables, 60 ml (1/4 cup) maple sugar, 30 ml (2 tbsp.) chopped fresh rosemary and 60 ml (1/4 cup) olive oil. Season with salt and pepper, then place on a wax-covered baking sheet.
  3. Bake for about 30 min. or until desired doneness is reached.
