Recipe — Maple-Flavoured Lentil "Meat" Spread

Ingredients

  • 1/4 cup maple syrup (preferably amber syrup for its rich flavour)
  • 1 small onion, chopped
  • 1 lentils (540 ml), drained
  • 1/2 cup vegetable broth (or cold water)
  • 1 Pinch of all-spice
  • 1 teaspoon fine salt

Method

  1. In a large saucepan over high heat, combine all the ingredients and bring to a boil.
  2. Lower the heat and let simmer 20 minutes while stirring occasionally.
  3. Remove from heat, then crush lentils to a purée with a potato masher.
  4. Transfer spread to an airtight container and chill several hours in the refrigerator.
  5. Serve with pita bread and raw vegetables.
