Cherry tomato and honeydew melon salad with maple syrup

Ingredients
  • 2 containers of cherry tomatoes on the vine, halved
  • 500 ml (2 cups) of honeydew melon, seeded and cut into cubes
  • 250 ml (1 cup) of pitted black olives, halved
  • 250 ml (1 cup) flat-leaf parsley, chopped
  • 2 garlic cloves, chopped
  • 250 ml (1 cup) feta cheese, diced
  • 30 ml (2 tbsp) cilantro, chopped
  • Juice and zest of a lemon
  • 60 ml (1/4 cup) maple syrup
  • 60 ml (1/4 cup) olive oil
  • Salt and pepper, to taste
