Apple and Maple Pie

Tarte aux pommes et à l'érable

Ingredients

Crust

  • 170 ml (2/3 cup) Graham cracker crumbs
  • 125 ml (1/2 cup) whole wheat flour
  • 125 ml (1/2 cup) ground almonds
  • 30 ml (2 tablespoons) maple syrup
  • 30 ml (2 tablespoons) melted butter or margarine
  • Pinch of salt

Filling

  • 1 litre (4 cups) apples (Cortland, Empire, Lobo), peeled, cored and sliced
  • 125 ml (1/2 cup) plain yogurt
  • 250 ml (1 cup) maple syrup
  • 125 ml (1/2 cup) whole wheat flour
  • 1 egg

Topping

  • 60 ml (1/4 cup) maple sugar chips
  • 15 ml (1 tablespoon) pine nuts
  • Cinnamon

Method
  1. Preheat oven to 160 °C (325 °F).
  2. In a bowl, combine all ingredients for the crust and press down into bottom of a 23-cm (9") pie plate.
  3. Bake for 12 minutes. Remove from oven and raise oven temperature to 190 °C (375 °F).
  4. Combine ingredients for the filling in a bowl. Spread over bottom of tart crust.
  5. Sprinkle maple sugar chips, pine nuts and cinnamon on top of tart.
  6. Bake in oven for 45 minutes.
 
Additional information

Maple sugar chips can usually be found in natural food stores and fine foods stores. You can also order them from your favourite grocer. If necessary, substitute with grated maple sugar.
