Dr. Keiko Abe of the Graduate School of Agriculture and the Life Sciences at the University of Tokyo conducted a study that revealed that maple syrup may promote better liver health. In parallel to the Japanese study, there is interest in North America about the benefits of maple, in particular its antioxidant properties. These discoveries, while preliminary, are one more reason to prefer maple when choosing a sweetener.
